Salmon Skin Acid-Soluble Collagen Produced by A Simplified Recovery Process: Yield, Compositions, and Molecular Characteristics

Acid-soluble collagen (ASC) is generally extracted by acid solubilization, followed precipitation and dialysis. Such a process typically time consuming tedious, especially for A simplified recovery based on water washing/centrifugation of pellets to replace dialysis was successfully developed. An ASC pellet from salmon (Oncorhynchus nerka) skin obtained salt (2.6 M). The washed with 50 volumes distilled (DW) centrifuged 0–3 cycles before lyophilization. As the washing augmented, decreases (p < 0.05) in NaCl content coincidental increase hydroxyproline were attained. Similar protein patterns between all samples, regardless cycles, noticeable. All ASCs classified as type I collagen. FTIR spectra revealed that possessed triple helical structure sufficient cycles. DW three (ASC-3C) selected characterized. ASC-3C showed high extraction yield (36.73%) had lightness. It exhibited thermal stability (Tmax = 37 °C) an ordered phase structure. Glycine imino acids dominant amino ASC-3C. Therefore, could be adopted production, which shorter used without adverse effects toward ASC.
